Lemon chicken soup with orzo

Preparation Time: 15 minutes 
Cook Time: 30 minutes 
Yield: 6 warm servings (each about 2 cups)

INGREDIENTS

  • 1 tablespoon of olive oil
  • 3 carrots, peeled and diced
  • half onion, diced
  • 3 cloves of garlic, chopped
  • 8-10 cups of chicken stock
  • 1 cup whole wheat DeLallo orzo
  • 3-ish glass of cooked chicken (I use grated rotisserie chicken)
  • 3 eggs
  • 3-4 lemon juice (about 1/2 cup)
  • a handful of fresh spinach
  • 1 1/2 teaspoon salt
  • lots of freshly ground pepper
  • as much as you can handle

INSTRUCTIONS

  • Base: Heat a large soup pan over medium heat. Add olive oil. Add carrots, shallots, and garlic. Saute until fragrant and soft, about 10 minutes. (Be careful not to burn the garlic.)
  • Orzo: Add broth and bring to a boil. Add orzo and cook for a few minutes until tender. Stir the chicken and remove from heat.
  • Eggs: Beat eggs and lemon juice together in a small bowl. The idea here is to warm the egg mixture slowly (without beating the egg). Slowly add one tablespoon of soup to the egg mixture. Then add your warmed egg mixture back to the soup pan - slowly, slowly, slowly, stirring constantly, until smooth and creamy.
  • Finishing touch: Finish by stirring the spinach, salt, pepper, and fennel, then adjust the seasoning to taste!

NOTE

  1. Broth: If you like chunkier soup, choose 8 cups of broth. If you like thicker soup, choose 10 cups.
  2. Leftovers: This works great as leftovers. Orzo likes to absorb that moisture, so you might have to thin it a little when it's heated.
  3. Eggs: If you add egg mixture to the soup when it is too hot, the eggs will scramble! That's dirty. Do not do it. To help your soup become faster in preparation for the egg mixture, you can stir in some ice cubes.
  4. Vegetarian: You can easily make this vegetarian by using white beans or other vegetarian protein instead of chicken.
