I started eating more tofu and this looks like an easy and delicious way to do it - I like you using curry paste in sauce! Yum!
VEGGIE QUICK TOFU STIR-FRY
YIELD: 4 SERVICES
TOTAL TIME : 15 MINUTES
INGREDIENTS:
- 1 pound of extra hard tofu, diced
- 1 organic red paprika, diced
- 1 organic yellow paprika, cuber
- 1 organic orange pepper, diced
- 12 ounces of fresh broccoli
- 1 tablespoon sesame seeds
- 1 tablespoon fresh ginger, chopped
- 3 tablespoons of sesame oil, olive oil will also work
- 2 tbs of red curry paste
- 1/3 cup reduced soy sauce
- 3 tablespoons water
- 1 1/2 teaspoon arrowroot powder
DIRECTION:
- In a small bowl, mix the sauce ingredients and set aside.
- In a large non-stick pan, oil and tofu and cook for 2-3 minutes or until chocolate starts around the edges. Add the chopped peppers and ginger and cook, stirring in between, until the soft peppers. Around 5 minutes.
- Add broccoli and cook further for 2 minutes. Add the sauce and stir, making sure it coats the vegetables and tofu. Turn off the heat and add sesame seeds.
- Serve immediately on brown rice or quinoa.
NOTE: You can use colored peppers of your choice.
