VEGGIE QUICK TOFU STIR-FRY

YIELD: 4 SERVICES
TOTAL TIME : 15 MINUTES

INGREDIENTS:

  • 1 pound of extra hard tofu, diced
  • 1 organic red paprika, diced
  • 1 organic yellow paprika, cuber
  • 1 organic orange pepper, diced
  • 12 ounces of fresh broccoli
  • 1 tablespoon sesame seeds
  • 1 tablespoon fresh ginger, chopped
  • 3 tablespoons of sesame oil, olive oil will also work

sauce

  • 2 tbs of red curry paste
  • 1/3 cup reduced soy sauce
  • 3 tablespoons water
  • 1 1/2 teaspoon arrowroot powder

DIRECTION:

  1. In a small bowl, mix the sauce ingredients and set aside.
  2. In a large non-stick pan, oil and tofu and cook for 2-3 minutes or until chocolate starts around the edges. Add the chopped peppers and ginger and cook, stirring in between, until the soft peppers. Around 5 minutes.
  3. Add broccoli and cook further for 2 minutes. Add the sauce and stir, making sure it coats the vegetables and tofu. Turn off the heat and add sesame seeds.
  4. Serve immediately on brown rice or quinoa.

NOTE: You can use colored peppers of your choice.
